- 8 oz Chinese wheat noodles

- 1/4 cup roasted peanuts or sesame seeds
Instructions
- Prepare the sauce by mixing sesame paste, soy sauce, rice vinegar, chili oil, dark soy sauce, sugar, crushed Sichuan peppercorns, minced garlic, and ginger until smooth.
- Cook the Chinese wheat noodles in boiling water until al dente (4-6 minutes), then drain and rinse with cold water.
- If using meat, heat vegetable oil in a skillet over medium heat and cook ground pork or beef until browned (5-7 minutes), then set aside.
- Toss the warm noodles with the prepared sauce in a large bowl.
- Add cooked meat if using, and mix thoroughly to coat noodles evenly.
- Serve in individual bowls, garnished with chopped green onions and roasted peanuts or sesame seeds.
