Ingredients

  • Sweet Potatoes: 2 large (about 1.5 lbs or 680 g), peeled and cut into 1-inch cubes.
  • Maple Syrup: 3 tablespoons.
  • Pecans: 1/2 cup, chopped.
  • Olive Oil: 2 tablespoons.
  • Ground Cinnamon: 1 teaspoon.
  • Salt: 1/2 teaspoon.
  • Black Pepper: 1/4 teaspoon.

Instructions

  1. Peel the sweet potatoes and cut them into 1-inch cubes.
  2. In a large mixing bowl, combine sweet potato cubes with olive oil, maple syrup, ground cinnamon, salt, and black pepper. Toss to coat evenly.
