Ingredients
- Sweet Potatoes: 2 large (about 1.5 lbs or 680 g), peeled and cut into 1-inch cubes.
- Maple Syrup: 3 tablespoons.
- Pecans: 1/2 cup, chopped.
- Olive Oil: 2 tablespoons.
- Ground Cinnamon: 1 teaspoon.
- Salt: 1/2 teaspoon.
- Black Pepper: 1/4 teaspoon.
Instructions
- Peel the sweet potatoes and cut them into 1-inch cubes.
- In a large mixing bowl, combine sweet potato cubes with olive oil, maple syrup, ground cinnamon, salt, and black pepper. Toss to coat evenly.
- Preheat the air fryer to 400°F (200°C) for about 5 minutes. Place the seasoned sweet potato cubes in the air fryer basket in a single layer.
- Cook for 15-20 minutes, shaking the basket halfway through for even cooking.
- Add the chopped pecans to the basket and toss with the sweet potatoes. Cook for an additional 2-3 minutes to toast the pecans.
- Remove from the air fryer and transfer to a serving dish. Drizzle with extra maple syrup if desired.
