Description

A crunchy and refreshing apple coleslaw with pecans.


Ingredients

Scale
  • 4 cups green cabbage, shredded
  • 2 cups red cabbage, shredded
  • 2 apples, cored and diced
  • 1 cup carrots, shredded
  • 1/2 cup pecans, chopped
  • 1/2 cup mayonnaise
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon honey
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine green and red cabbage.
  2. Add diced apples and shredded carrots.
  3. Mix in chopped pecans.
  4. In a separate bowl, whisk together mayonnaise, apple cider vinegar, honey, salt, and pepper.
  5. Pour the dressing over the cabbage mixture and toss to combine.
  6. Chill in the refrigerator for at least 30 minutes before serving.

Notes

  • Adjust sweetness by adding more or less honey.
  • For extra crunch, add more pecans.
  • This coleslaw can be made a day ahead.
