Description

A refreshing Asian noodle salad with a tangy dressing.


Ingredients

  • 200g rice noodles
  • 1 cup shredded carrots
  • 1 cup sliced bell peppers
  • 1 cup cucumber, sliced
  • 1/2 cup green onions, chopped
  • 1/4 cup cilantro, chopped
  • 3 tbsp soy sauce
  • 2 tbsp rice vinegar
  • 1 tbsp sesame oil
  • 1 tbsp honey
  • 1 tsp ginger, grated
  • 1 tsp garlic, minced

Instructions

  1. Cook rice noodles according to package instructions.
  2. Drain and rinse noodles under cold water.
  3. In a large bowl, combine noodles, carrots, bell peppers, cucumber, green onions, and cilantro.
  4. In a small bowl, whisk together soy sauce, rice vinegar, sesame oil, honey, ginger, and garlic.
  5. Pour the dressing over the salad and toss to combine.
  6. Serve chilled or at room temperature.

  • Customize with your choice of protein such as chicken or tofu.
  • Adjust sweetness by adding more or less honey.
