Description
A refreshing Asian noodle salad with a tangy dressing.
Ingredients

- 200g rice noodles
- 1 cup shredded carrots
- 1 cup sliced bell peppers
- 1 cup cucumber, sliced
- 1/2 cup green onions, chopped
- 1/4 cup cilantro, chopped
- 3 tbsp soy sauce
- 2 tbsp rice vinegar
- 1 tbsp sesame oil
- 1 tbsp honey
- 1 tsp ginger, grated
- 1 tsp garlic, minced
Instructions
- Cook rice noodles according to package instructions.
- Drain and rinse noodles under cold water.
- In a large bowl, combine noodles, carrots, bell peppers, cucumber, green onions, and cilantro.
- In a small bowl, whisk together soy sauce, rice vinegar, sesame oil, honey, ginger, and garlic.
- Pour the dressing over the salad and toss to combine.
- Serve chilled or at room temperature.
Notes
- Customize with your choice of protein such as chicken or tofu.
- Adjust sweetness by adding more or less honey.
