- 1/3 cup balsamic vinegar
- 2 Tbsp honey
- 2 Tbsp avocado or olive oil
- 2 garlic cloves, minced
- 1 tsp Italian seasoning
- 1 Tbsp Dijon mustard
- 8 oz grape tomatoes, halved
- 8 oz fresh mozzarella balls
- 2 Tbsp finely chopped fresh basil
- 2 lb boneless skinless chicken breasts, pounded to even thickness
- 2 Tbsp avocado oil or other high heat oil
- Kosher salt and fresh black pepper to taste
Instructions
- In a medium-sized bowl, whisk together balsamic vinegar, honey, avocado oil, garlic, Italian seasoning, and Dijon mustard. Season with salt and pepper, and set aside.
- In a separate bowl, mix halved grape tomatoes, mozzarella balls, and basil. Season with salt and pepper and set aside.
- Preheat the oven to 400°F (200°C). Heat avocado oil in a large oven-safe skillet over medium-high heat. Season chicken breasts with salt and pepper, and cook until golden brown, about 1-2 minutes per side.
- Pour the balsamic sauce over the chicken, let simmer, then add the tomato and mozzarella mixture. Bake uncovered for 18-23 minutes until chicken reaches 165°F (74°C). Let rest for 5 minutes before serving.
Notes
For even better flavor, marinate the chicken in the balsamic mixture for a few hours or overnight before cooking. This allows the chicken to soak up the delicious flavors.
