Banh Mi with pickled vegetables is a delightful Vietnamese sandwich that combines a crispy baguette with a variety of fresh and flavorful ingredients, including pickled carrots and daikon radish.

Ingredients

Scale
  • 1 large crispy baguette

  2. Marinate the protein (pork or tofu) in soy sauce, garlic, and sugar for at least 30 minutes.
  3. Spread mayonnaise on both sides of the baguette and drizzle soy sauce over it.
  4. Layer pickled vegetables, cucumber slices, cilantro, and jalapeño on the bottom half of the baguette.
  5. Add the marinated protein on top of the vegetables.
  6. Toast the baguette in a preheated oven at 350°F (175°C) for 5-7 minutes.
  7. Close the baguette, press gently, and cut into portions. Serve immediately.
