- 1 large crispy baguette
- 1/2 cup pickled carrots
- 1/2 cup pickled daikon radish
- 1/2 cup cucumber slices
- Fresh cilantro
- Jalapeño slices (optional)
- Mayonnaise
- Soy sauce
- Protein of choice (grilled pork, marinated tofu, etc.)
Instructions
- Prepare the pickled vegetables by combining thinly sliced carrots and daikon radish with equal parts vinegar and water, sugar, and salt. Let sit for at least 30 minutes.
- Marinate the protein (pork or tofu) in soy sauce, garlic, and sugar for at least 30 minutes.
- Spread mayonnaise on both sides of the baguette and drizzle soy sauce over it.
- Layer pickled vegetables, cucumber slices, cilantro, and jalapeño on the bottom half of the baguette.
- Add the marinated protein on top of the vegetables.
- Toast the baguette in a preheated oven at 350°F (175°C) for 5-7 minutes.
- Close the baguette, press gently, and cut into portions. Serve immediately.
