- 2 cups cooked rice
- 1 lb boneless skinless chicken breast, cut into bite-sized pieces
- 1 tablespoon olive oil
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 1/2 teaspoon smoked paprika
- 1/2 cup barbecue sauce
- 2 tablespoons honey
- 1 tablespoon soy sauce
- 1 tablespoon apple cider vinegar
- 1/2 teaspoon red pepper flakes (optional)
- 2 green onions, chopped (for garnish)
Instructions
- Heat olive oil in a large skillet over medium-high heat.
- Add chicken pieces and season with salt, pepper, garlic powder, and smoked paprika. Cook for 5–6 minutes until browned and fully cooked.
- In a bowl, whisk together barbecue sauce, honey, soy sauce, apple cider vinegar, and red pepper flakes.
- Pour the sauce over the chicken in the skillet. Stir to coat and simmer for 2–3 minutes.
- Add cooked rice to the skillet and stir to combine. Cook for another 2 minutes until heated through.
- Remove from heat and garnish with chopped green onions. Serve hot.
Notes
- You can substitute chicken thighs or rotisserie chicken.
- Use brown rice, cauliflower rice, or quinoa for dietary adjustments.
- Customize the heat by adding more or less red pepper flakes or hot sauce.
- Store leftovers in an airtight container in the fridge for up to 4 days.
- Freeze for longer storage; thaw overnight before reheating.
