Description

  • 2 cups cooked rice
  • 1 lb boneless skinless chicken breast, cut into bite-sized pieces
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • 1/2 cup barbecue sauce
  • 2 tablespoons honey
  • 1 tablespoon soy sauce
  • 1 tablespoon apple cider vinegar
  • 1/2 teaspoon red pepper flakes (optional)
  • 2 green onions, chopped (for garnish)

Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add chicken pieces and season with salt, pepper, garlic powder, and smoked paprika. Cook for 5–6 minutes until browned and fully cooked.
  3. In a bowl, whisk together barbecue sauce, honey, soy sauce, apple cider vinegar, and red pepper flakes.
  4. Pour the sauce over the chicken in the skillet. Stir to coat and simmer for 2–3 minutes.
  5. Add cooked rice to the skillet and stir to combine. Cook for another 2 minutes until heated through.
  6. Remove from heat and garnish with chopped green onions. Serve hot.

Notes

  • You can substitute chicken thighs or rotisserie chicken.
  • Use brown rice, cauliflower rice, or quinoa for dietary adjustments.
  • Customize the heat by adding more or less red pepper flakes or hot sauce.
