- 1 teaspoon onion powder
- 2 tablespoons butter
- 1 tablespoon minced garlic
- 1/2 cup BBQ sauce
- 1 cup shredded mozzarella cheese
Instructions
- Peel, wash, and cut potatoes into small cubes. Toss with olive oil, salt, pepper, garlic powder, and paprika until coated.
- Preheat air fryer to 400°F. Air fry potatoes in a single layer for 20-25 minutes, shaking occasionally to crisp evenly.
- Cut chicken breasts into cubes. In a skillet over medium-high heat, melt butter and cook chicken with salt, pepper, paprika, ranch seasoning, and onion powder until no longer pink, about 5-7 minutes.
- Add minced garlic and BBQ sauce to chicken, stir to combine.
- Add cooked potatoes to the skillet, mix well with chicken and sauce.
- Top with shredded mozzarella cheese and cover or broil until cheese is melted and bubbly.
- Drizzle additional BBQ sauce before serving if desired.
