Description

  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon ranch seasoning
  • 1 teaspoon onion powder
  • 2 tablespoons butter
  • 1 tablespoon minced garlic
  • 1/2 cup BBQ sauce
  • 1 cup shredded mozzarella cheese

Instructions

  1. Peel, wash, and cut potatoes into small cubes. Toss with olive oil, salt, pepper, garlic powder, and paprika until coated.
  2. Preheat air fryer to 400°F. Air fry potatoes in a single layer for 20-25 minutes, shaking occasionally to crisp evenly.
  3. Cut chicken breasts into cubes. In a skillet over medium-high heat, melt butter and cook chicken with salt, pepper, paprika, ranch seasoning, and onion powder until no longer pink, about 5-7 minutes.
  4. Add minced garlic and BBQ sauce to chicken, stir to combine.
  5. Add cooked potatoes to the skillet, mix well with chicken and sauce.
  6. Top with shredded mozzarella cheese and cover or broil until cheese is melted and bubbly.
  7. Drizzle additional BBQ sauce before serving if desired.
