- 1/3 cup oyster sauce
- 1/3 cup sherry
- 2 teaspoons toasted sesame oil
- 1 teaspoon soy sauce
- 1 teaspoon white sugar
- 1 teaspoon cornstarch
- 3/4 pound beef round steak, cut into 1/8-inch thick strips
- 3 tablespoons vegetable oil, plus more if needed
- 1 thin slice fresh ginger root
- 1 clove garlic, peeled and smashed
- 1 pound broccoli, cut into florets
Instructions
- Slice the beef round steak into thin strips and cut broccoli into small florets.
- In a bowl, mix oyster sauce, sherry, sesame oil, soy sauce, sugar, and cornstarch. Add beef and marinate for at least 30 minutes in the refrigerator.
- Heat 3 tablespoons vegetable oil in a wok over medium-high heat. Add ginger and garlic; sauté for 1 minute. Remove and discard.
- Add broccoli to the wok. Stir-fry for 5–7 minutes until bright green and almost tender. Remove and set aside.
- Add more oil if needed, then add beef and marinade to the wok. Stir-fry for 5 minutes until beef is cooked and sauce thickens.
- Return broccoli to the wok. Stir to combine and cook for an additional 3 minutes until heated through.
- Serve hot with rice or noodles.
Notes
- Don’t overcook the broccoli to maintain its crispness.
- Marinate the beef for at least 30 minutes for maximum flavor.
- Freeze beef for 20 minutes before slicing to make it easier to cut thinly.
- Prep all ingredients in advance for faster cooking.
