  • Cooked Rice: 1 cup
  • Black Beans: 1 can, drained and rinsed
  • Shredded Cheese: to taste
  • Flour Tortillas: large, as needed

  • Salsa: to taste
  • Fresh Cilantro: chopped, to taste
  • Olive Oil: 1 tablespoon
  • Taco Seasoning: to taste (optional)

Instructions

  1. Heat a large skillet over medium heat and add olive oil.
  2. Add ground beef, season with salt, pepper, and taco seasoning, and cook until browned (5-7 minutes).
  3. Add black beans and cooked rice to the skillet, stir, and heat for 2-3 minutes.
  4. Lay a flour tortilla flat and spoon 1/4 of the beef mixture into the center.

  6. Fold the sides of the tortilla over the filling and roll it up tightly.
