- 1 lb beef, cut into cubes
- 1 can coconut milk
- 2 tablespoons Massaman curry paste
- 1 onion, chopped
- 2 potatoes, diced
- 1 carrot, sliced
- 2 tablespoons fish sauce
- 1 tablespoon sugar
- 1 cup beef broth
- 1 tablespoon lime juice
- Fresh cilantro for garnish
Instructions
- Heat a pot over medium heat and add the Massaman curry paste.
- Add the beef cubes and brown them on all sides.
- Stir in the chopped onion and cook until softened.
- Add the coconut milk, beef broth, fish sauce, and sugar. Bring to a simmer.
- Add the potatoes and carrots and cook until tender.
- Stir in the lime juice before serving.
- Garnish with fresh cilantro.
Notes
- Serve with steamed rice.
- Adjust the spice level to taste.
- Can substitute beef with chicken or tofu for a different variation.
