- 1 cucumber, diced
- 100g feta cheese, crumbled

Instructions
- Prepare the beets by boiling or roasting them until tender.
- Let the beets cool, then dice them into small cubes.
- Dice the cucumber into small pieces.
- In a bowl, combine the diced beets, cucumber, and crumbled feta cheese.
- In a separate bowl, whisk together olive oil, balsamic vinegar, salt, and pepper.
- Pour the dressing over the salad and toss gently.
- Garnish with chopped parsley before serving.
