- 8 corn tortillas
- 2 cups shredded cheese (cheddar or Monterey Jack)
- 1 can (10 oz) enchilada sauce
- 1/2 cup chopped onion
- 1/4 cup chopped cilantro
- 1 tablespoon vegetable oil
Instructions
- Preheat your oven to 350°F (175°C).
- Heat the tortillas in a skillet with vegetable oil until soft.
- Spread some enchilada sauce on the bottom of a baking dish.
- Fill each tortilla with cheese, onion, and cilantro, then roll them up.
- Place the rolled tortillas seam-side down in the baking dish.
- Pour the remaining enchilada sauce over the top.
- Sprinkle additional cheese on top.
- Bake for 20 minutes or until cheese is bubbly.
