Description
Birria Grilled Cheese is a flavorful fusion of slow-cooked spicy beef birria and melted cheese, sandwiched between crispy Texas toast slices and served with rich dipping juices.

- 3 pounds chuck roast
- 1 tablespoon olive oil
- 1 tablespoon beef bouillon powder or 1 bouillon cube
- 1 (28-ounce) can red enchilada sauce
- ½ cup unsalted butter
- 20 slices Texas toast
- 1 medium white onion, finely diced
- 2½ cups queso fresco
- 2½ cups shredded mozzarella cheese
- 2 teaspoons chopped cilantro
Instructions
- Heat olive oil in a skillet over medium-high heat and sear the chuck roast on all sides until golden brown, about 3-5 minutes per side. Remove and set aside.
- Place seared chuck roast in a slow cooker. Sprinkle beef bouillon powder or add bouillon cube over the meat. Pour the red enchilada sauce on top. Cover and cook on low for about 10 hours until tender.
- Remove beef from slow cooker and shred with two forks. Return shredded beef to slow cooker and mix with remaining sauce.
- Preheat a skillet over medium-high heat. Butter one side of each Texas toast slice. Place one slice buttered-side down on skillet, add ½ cup shredded beef, 1 tablespoon diced onion, ¼ cup queso fresco, ¼ cup mozzarella, and a sprinkle of cilantro. Top with another slice of bread, buttered side up.
- Cook sandwich for 5-7 minutes per side until bread is golden brown and cheese is melted. Remove from skillet.
- Serve immediately with small bowls of the leftover birria juices for dipping.
Notes
- You can substitute brisket or chicken for chuck roast.
- Use any thick-sliced bread if Texas toast is unavailable.
- Cheddar or pepper jack can replace queso fresco or mozzarella.
- For sauce alternatives, try salsa verde or spicy tomato sauce.
