Description

A delicious and easy-to-make blueberry cream cheese French toast casserole.


Ingredients

  • 1 loaf of brioche bread, cubed
  • 8 oz cream cheese, softened
  • 2 cups blueberries, fresh or frozen
  • 6 large eggs
  • 2 cups milk
  • 1/4 cup maple syrup
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • 1/4 tsp salt

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Grease a 9×13 inch baking dish.
  3. Spread half of the bread cubes in the dish.
  4. Mix cream cheese and half of the blueberries in a bowl.
  5. Spread the cream cheese mixture over the bread cubes.
  6. Add the remaining bread cubes on top.
  7. In another bowl, whisk together eggs, milk, maple syrup, vanilla, cinnamon, and salt.
  8. Pour the egg mixture over the bread.
  9. Top with remaining blueberries.
  10. Bake for 45-50 minutes until golden brown.

Notes

  • Let the casserole sit for 10 minutes before serving.
  • Serve with extra maple syrup if desired.
  • This dish can be prepared the night before and baked in the morning.
