A delicious and easy-to-make blueberry cream cheese French toast casserole.

- 1 loaf of brioche bread, cubed
- 8 oz cream cheese, softened
- 2 cups blueberries, fresh or frozen
- 6 large eggs
- 2 cups milk
- 1/4 cup maple syrup
- 1 tsp vanilla extract
- 1 tsp cinnamon
- 1/4 tsp salt
Instructions
- Preheat the oven to 350°F (175°C).
- Grease a 9×13 inch baking dish.
- Spread half of the bread cubes in the dish.
- Mix cream cheese and half of the blueberries in a bowl.
- Spread the cream cheese mixture over the bread cubes.
- Add the remaining bread cubes on top.
- In another bowl, whisk together eggs, milk, maple syrup, vanilla, cinnamon, and salt.
- Pour the egg mixture over the bread.
- Top with remaining blueberries.
- Bake for 45-50 minutes until golden brown.
Notes
- Let the casserole sit for 10 minutes before serving.
- Serve with extra maple syrup if desired.
- This dish can be prepared the night before and baked in the morning.
