Ingredients

  • 2 large eggs
  • 1 tablespoon cornstarch

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix flour, butter, sugar, and salt.
  3. Press the mixture into a greased 8×8 inch baking dish.
  4. Bake for 15 minutes.
  5. In another bowl, combine blueberries, lemon zest, lemon juice, sugar, eggs, and cornstarch.
  6. Pour the filling over the baked crust.
  7. Bake for an additional 25-30 minutes until set.
  8. Let cool before cutting into bars.
