- 2 cups fresh blueberries
- 1 cup sugar
- 1 tablespoon cornstarch
- 1 tablespoon lemon juice
- 1 package refrigerated pie crusts
- 1 egg (for egg wash)
- 1 tablespoon milk (for egg wash)
Instructions
- Preheat your oven to 375°F (190°C).
- In a bowl, mix blueberries, sugar, cornstarch, and lemon juice.
- Roll out the pie crusts and cut them into circles.
- Place a spoonful of the blueberry mixture in the center of each circle.
- Fold the crust over to form a pocket and seal the edges.
- Mix the egg and milk to make an egg wash.
- Brush the tops of the pie bombs with the egg wash.
- Bake for 20-25 minutes or until golden brown.
- Let cool before serving.
