Ingredients

- 1 kg octopus
- 1 onion, quartered
- 2 bay leaves
- Salt to taste
- Water as needed
Instructions
- Clean the octopus under cold running water.
- In a large pot, add water, onion, bay leaves, and salt.
- Bring the water to a boil.
- Add the octopus to the boiling water.
- Reduce heat and simmer for 45 minutes.
- Check for tenderness; simmer longer if needed.
- Remove the octopus and let it cool before slicing.
Notes
- Serve with olive oil and lemon.
- Use fresh octopus for best results.
