Ingredients

- 3 pounds beef roast
- 2 tablespoons olive oil
- 1 onion, chopped
- 4 cloves garlic, minced
- 2 cups beef broth
- 1 cup red wine
- 2 carrots, chopped
- 2 celery stalks, chopped
- 2 teaspoons thyme
- Salt and pepper to taste
Instructions
- Preheat your oven to 325°F (163°C).
- Season the beef roast with salt and pepper.
- Heat olive oil in a large pot over medium-high heat.
- Sear the beef roast on all sides until browned.
- Remove the roast and set aside.
- Add onion and garlic to the pot, cooking until softened.
- Stir in carrots and celery, cooking for a few minutes.
- Pour in the beef broth and red wine, scraping up any browned bits.
- Add thyme and return the roast to the pot.
- Cover and transfer to the oven.
- Braise for 3 to 4 hours, until the meat is tender.
- Remove from the oven and let it rest before slicing.
Notes
- Serve with mashed potatoes or crusty bread.
- Store leftovers in the refrigerator for up to 3 days.
