Description

Ingredients

  • 3 pounds beef roast
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 2 cups beef broth
  • 1 cup red wine
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 2 teaspoons thyme
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 325°F (163°C).
  2. Season the beef roast with salt and pepper.
  3. Heat olive oil in a large pot over medium-high heat.
  4. Sear the beef roast on all sides until browned.
  5. Remove the roast and set aside.
  6. Add onion and garlic to the pot, cooking until softened.
  7. Stir in carrots and celery, cooking for a few minutes.
  8. Pour in the beef broth and red wine, scraping up any browned bits.
  9. Add thyme and return the roast to the pot.
  10. Cover and transfer to the oven.
  11. Braise for 3 to 4 hours, until the meat is tender.
  12. Remove from the oven and let it rest before slicing.
