Description

A hearty and flavorful breakfast burrito casserole perfect for a family meal.


Ingredients

  • 8 large eggs
  • 2 cups milk
  • 1 cup shredded cheddar cheese
  • 1 cup cooked breakfast sausage, crumbled
  • 1 cup diced bell peppers
  • 1 cup diced onions
  • 1 cup diced tomatoes
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • 8 flour tortillas, cut into strips

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, whisk together eggs and milk.
  3. Add cheese, sausage, bell peppers, onions, tomatoes, cumin, chili powder, salt, and pepper.
  4. In a greased baking dish, layer the tortilla strips.
  5. Pour the egg mixture over the tortillas.
  6. Bake for 30-35 minutes or until the egg is set.
  7. Let cool for a few minutes before serving.
