Ingredients

- 8 large eggs
- 2 cups milk
- 1 cup shredded cheddar cheese
- 1 cup cooked breakfast sausage, crumbled
- 1 cup diced bell peppers
- 1 cup diced onions
- 1 cup diced tomatoes
- 1 teaspoon cumin
- 1 teaspoon chili powder
- Salt and pepper to taste
- 8 flour tortillas, cut into strips
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, whisk together eggs and milk.
- Add cheese, sausage, bell peppers, onions, tomatoes, cumin, chili powder, salt, and pepper.
- In a greased baking dish, layer the tortilla strips.
- Pour the egg mixture over the tortillas.
- Bake for 30-35 minutes or until the egg is set.
- Let cool for a few minutes before serving.
Notes
- Can substitute sausage with bacon or turkey.
- Top with avocado or salsa before serving.
