Description

A delicious twist on traditional lasagna, combining spicy buffalo chicken with creamy cheeses and rich sauces.


Ingredients

  • 12 sheets lasagna noodles, oven ready
  • 1 cup ricotta cheese
  • 8 ounces blue cheese
  • 1 large egg
  • 1/4 cup parsley, chopped
  • 1/4 teaspoon salt, or to taste
  • 1/4 teaspoon pepper, or to taste
  • 2 cups cooked chicken, shredded
  • 3/4 cup buffalo wing sauce
  • 3/4 cup ranch dressing
  • 1 can (15 ounces) diced tomatoes
  • 4 cups mozzarella cheese

Instructions

  1. Preheat your oven to 375°F. In a medium bowl, mix ricotta cheese, blue cheese, egg, parsley, salt, and pepper until combined.
  2. In another bowl, combine shredded chicken, buffalo wing sauce, ranch dressing, and diced tomatoes.
  3. In a 9×13 inch baking dish, spoon 1/4 of the chicken mixture at the bottom. Lay down 4 sheets of lasagna noodles, then add another 1/4 of the chicken mixture, followed by 1/3 of the cheese mixture and 1/3 of mozzarella cheese.
  4. Repeat the layering process two more times, ending with a generous amount of mozzarella cheese on top.
  5. Cover with aluminum foil and bake for 30 minutes. Then uncover and bake for an additional 20 minutes or until bubbly. Allow to cool for a few minutes before serving.

Notes

Customize the recipe by using different cheeses or adjusting the spiciness of the buffalo sauce. Serve with extra parsley or crumbled blue cheese on top.
