A delicious twist on traditional lasagna, combining spicy buffalo chicken with creamy cheeses and rich sauces.

- 12 sheets lasagna noodles, oven ready
- 1 cup ricotta cheese
- 8 ounces blue cheese
- 1 large egg
- 1/4 cup parsley, chopped
- 1/4 teaspoon salt, or to taste
- 1/4 teaspoon pepper, or to taste
- 2 cups cooked chicken, shredded
- 3/4 cup buffalo wing sauce
- 3/4 cup ranch dressing
- 1 can (15 ounces) diced tomatoes
- 4 cups mozzarella cheese
Instructions
- Preheat your oven to 375°F. In a medium bowl, mix ricotta cheese, blue cheese, egg, parsley, salt, and pepper until combined.
- In another bowl, combine shredded chicken, buffalo wing sauce, ranch dressing, and diced tomatoes.
- In a 9×13 inch baking dish, spoon 1/4 of the chicken mixture at the bottom. Lay down 4 sheets of lasagna noodles, then add another 1/4 of the chicken mixture, followed by 1/3 of the cheese mixture and 1/3 of mozzarella cheese.
- Repeat the layering process two more times, ending with a generous amount of mozzarella cheese on top.
- Cover with aluminum foil and bake for 30 minutes. Then uncover and bake for an additional 20 minutes or until bubbly. Allow to cool for a few minutes before serving.
Notes
Customize the recipe by using different cheeses or adjusting the spiciness of the buffalo sauce. Serve with extra parsley or crumbled blue cheese on top.
