- 8 slices of sourdough bread
- 2 cups shredded cooked chicken
- 1/2 cup buffalo sauce
- 8 slices of cheddar cheese
- 4 tablespoons unsalted butter, softened
- Optional: sliced tomatoes
- Optional: caramelized onions
Instructions
- In a bowl, combine shredded chicken with buffalo sauce until evenly coated. Set aside.
- Spread softened butter on one side of each slice of sourdough bread.
- On the unbuttered side of 4 slices, layer one slice of cheddar cheese, a portion of the buffalo chicken mixture, optional toppings (tomatoes or onions), and another slice of cheddar. Top with the remaining bread slices, buttered side up.
- Preheat a skillet or griddle over medium heat.
- Place the sandwiches on the skillet, buttered side down, and cook for 4–5 minutes until golden and crispy. Press with a spatula.
- Flip and cook the other side for another 4–5 minutes until the bread is golden and the cheese is melted.
- Remove from skillet, slice in half, and serve hot.
Notes
- Don’t overdo the buffalo sauce or the sandwich may become soggy.
- Using a panini press can create extra crispy sandwiches.
- Letting the chicken sit in sauce for a few minutes enhances flavor.
- For a milder taste, mix buffalo sauce with a bit of ranch or mayo.
