Description

Butter Chicken (Murgh Makhani) is a classic Indian dish featuring tender chicken in a creamy, spiced tomato sauce. Rich and flavorful, it’s perfect for any occasion.


Ingredients

  • 1 pound boneless, skinless chicken thighs or breasts
  • 1 cup plain full-fat yogurt
  • 4 tablespoons butter
  • 1 cup heavy cream
  • 1 cup tomato purée
  • 4 cloves garlic, minced
  • 1 tablespoon grated ginger
  • 1 medium onion, finely chopped
  • 2 teaspoons garam masala
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • 1 teaspoon chili powder (adjust to taste)
  • Salt, to taste
  • Fresh cilantro, for garnish

Instructions

  1. Marinate the chicken: Combine chicken with yogurt, salt, chili powder, and 1 teaspoon garam masala. Let it marinate for at least 1 hour, or overnight for best results.
  2. Sauté the onions and spices: Melt butter in a skillet over medium heat. Add onions and sauté until golden, about 5-7 minutes. Add garlic and ginger, then cook for 1 minute. Add cumin, coriander, and the remaining garam masala, cooking for 1-2 minutes.
  3. Cook the chicken: Increase heat to medium-high and add the marinated chicken. Cook for 6-8 minutes, stirring occasionally, until browned.
  4. Prepare the sauce: Add tomato purée to the skillet and simmer for 10 minutes. Add heavy cream and remaining butter, simmer for another 5-10 minutes until the sauce thickens and chicken is fully cooked.
  5. Serve the Butter Chicken: Garnish with fresh cilantro and serve with naan, basmati rice, or parathas.

Notes

  • You can substitute chicken with shrimp or paneer for a vegetarian option.
  • For a dairy-free version, use coconut cream in place of heavy cream.
