Description

A rich and creamy butterscotch cheesecake with a buttery graham cracker crust.


Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1 cup brown sugar
  • 3 packages (8 ounces each) cream cheese, softened
  • 1 cup sour cream
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup butterscotch chips

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. Combine graham cracker crumbs and melted butter in a bowl. Press mixture into the bottom of a springform pan.
  3. In a large bowl, beat cream cheese and brown sugar until smooth.
  4. Add sour cream, eggs, and vanilla. Blend until fully combined.
  5. Stir in butterscotch chips.
  6. Pour the cheesecake filling over the crust.
  7. Bake for 55-60 minutes until the center is set.
  8. Allow to cool, then refrigerate for at least 4 hours before serving.
