A rich and creamy butterscotch cheesecake with a buttery graham cracker crust.

- 1 1/2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 1 cup brown sugar
- 3 packages (8 ounces each) cream cheese, softened
- 1 cup sour cream
- 3 large eggs
- 1 teaspoon vanilla extract
- 1 cup butterscotch chips
Instructions
- Preheat your oven to 325°F (160°C).
- Combine graham cracker crumbs and melted butter in a bowl. Press mixture into the bottom of a springform pan.
- In a large bowl, beat cream cheese and brown sugar until smooth.
- Add sour cream, eggs, and vanilla. Blend until fully combined.
- Stir in butterscotch chips.
- Pour the cheesecake filling over the crust.
- Bake for 55-60 minutes until the center is set.
- Allow to cool, then refrigerate for at least 4 hours before serving.
Notes
- Use room temperature ingredients for best results.
- Top with whipped cream if desired.
- Store leftovers in the refrigerator.
