Cajun Chicken Rotini with Creamy Mozzarella Sauce is a delightful dish that combines tender chicken, zesty Cajun spices, and a rich, creamy sauce that coats the rotini pasta perfectly.


Ingredients

  • Rotini pasta: 12 oz (about 340 g)
  • Chicken breast: 1 lb (about 450 g), diced
  • Cajun seasoning: 2 tablespoons
  • Velveeta cheese: 8 oz (about 225 g), cubed
  • Mozzarella cheese: 1 cup (about 100 g), shredded
  • Heavy cream: 1 cup (about 240 ml)
  • Garlic: 3 cloves, minced
  • Onion: 1 medium, diced
  • Bell peppers: 1 cup, diced (any color)
  • Green onions: 1/4 cup, chopped (for garnish)
  • Olive oil: 2 tablespoons
  • Salt and pepper: to taste

Instructions

  1. Boil water in a large pot, add salt, and cook the rotini pasta according to package instructions until al dente, about 8-10 minutes. Drain and set aside.
  2. Heat a large skillet over medium heat, add olive oil, and cook the diced chicken breast with Cajun seasoning, salt, and pepper for about 5-7 minutes until golden brown. Remove and set aside.
  3. In the same skillet, sauté diced onion, bell peppers, and minced garlic for 3-4 minutes. Reduce heat to low, add heavy cream, and stir in cubed Velveeta cheese until melted. Then mix in shredded mozzarella cheese until fully melted.
  4. Add the cooked rotini and sautéed chicken back into the skillet with the creamy sauce, tossing gently to coat. Add pasta water if the sauce is too thick.
  5. Serve warm, garnished with chopped green onions.
