Ingredients
- Rotini pasta: 12 oz (about 340 g)
- Chicken breast: 1 lb (about 450 g), diced
- Cajun seasoning: 2 tablespoons
- Velveeta cheese: 8 oz (about 225 g), cubed
- Mozzarella cheese: 1 cup (about 100 g), shredded
- Heavy cream: 1 cup (about 240 ml)
- Garlic: 3 cloves, minced
- Onion: 1 medium, diced
- Bell peppers: 1 cup, diced (any color)
- Green onions: 1/4 cup, chopped (for garnish)
- Olive oil: 2 tablespoons
- Salt and pepper: to taste
Instructions
- Boil water in a large pot, add salt, and cook the rotini pasta according to package instructions until al dente, about 8-10 minutes. Drain and set aside.
- Heat a large skillet over medium heat, add olive oil, and cook the diced chicken breast with Cajun seasoning, salt, and pepper for about 5-7 minutes until golden brown. Remove and set aside.
- In the same skillet, sauté diced onion, bell peppers, and minced garlic for 3-4 minutes. Reduce heat to low, add heavy cream, and stir in cubed Velveeta cheese until melted. Then mix in shredded mozzarella cheese until fully melted.
- Add the cooked rotini and sautéed chicken back into the skillet with the creamy sauce, tossing gently to coat. Add pasta water if the sauce is too thick.
- Serve warm, garnished with chopped green onions.
