- 2 cups all-purpose flour
- 2 cups grated carrots
- 1 cup sugar
- 1 cup brown sugar
- 1 cup vegetable oil
- 4 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup chopped pecans
- 1 cup caramel sauce
Instructions
- Preheat your oven to 350°F (175°C).
- Grease and flour two 9-inch round cake pans.
- In a bowl, mix flour, baking powder, baking soda, and salt.
- In another bowl, beat sugar, brown sugar, and oil together.
- Add eggs and vanilla to the sugar mixture, then mix well.
- Gradually add the dry ingredients to the wet ingredients.
- Fold in grated carrots and chopped pecans.
- Pour the batter evenly into the prepared pans.
- Bake for 30-35 minutes or until a toothpick comes out clean.
- Let the cakes cool in the pans for 10 minutes, then remove them from the pans.
- Drizzle caramel sauce over the top of each cake before serving.
Notes
- Store leftovers in an airtight container.
- Use toasted pecans for added flavor.
- For a richer taste, add cream cheese frosting.
