Instructions
- Preheat oven to 350°F (175°C).
- In a large bowl, mix grated carrots, zucchini, and apple.
- In another bowl, combine flour, sugar, baking powder, baking soda, salt, and cinnamon.
- Add the wet ingredients to the dry ingredients and mix until just combined.
- Fill muffin cups with batter and bake for 20-25 minutes.
- Let muffins cool completely.
- For frosting, beat cream cheese and butter until smooth.
- Add powdered sugar and milk, mixing until creamy.
- Frost muffins with cream cheese frosting.
