Description

Carrot and cabbage slaw is a colorful and crunchy salad that combines finely shredded green cabbage and grated carrots, often enhanced with red bell pepper, green onions, and fresh cilantro, dressed with a zesty mixture of olive oil, apple cider vinegar, and honey or maple syrup.

Ingredients

Scale
  • 2 cups green cabbage, finely shredded
  • 2 cups carrots, grated or finely shredded
  • 1/4 cup red bell pepper, finely chopped (optional)
  • 1/4 cup green onions, sliced
  • 1/4 cup fresh cilantro, chopped (optional)
  • 2 tablespoons sesame seeds, toasted (for garnish)

For the dressing:

  • 1/4 cup olive oil
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon Dijon mustard
  • 1 clove garlic, minced
  • Salt and pepper to taste

Instructions

  1. Prepare the vegetables by finely shredding the cabbage and grating the carrots. Chop the red bell pepper, slice the green onions, and chop the cilantro if using.
  2. In a small bowl, combine the olive oil, apple cider vinegar, honey or maple syrup, Dijon mustard, and minced garlic. Whisk until well blended and season with salt and pepper.
  3. Pour the dressing over the vegetable mixture and toss to coat evenly.
  4. Let the slaw sit for 15-20 minutes at room temperature or refrigerate for a colder slaw before serving.

Notes

  • Choose fresh, firm heads of cabbage for the best texture.
  • Grate carrots uniformly for even mixing.
  • Consider adding fruits like apples or nuts for variation.
  • Store in an airtight container in the refrigerator for up to three days.
