Ingredients

- 1 medium cauliflower, cut into florets
- 1 cup cherry tomatoes, halved
- 1/2 cup red onion, diced
- 1/4 cup parsley, chopped
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- Salt and pepper to taste
Instructions
- Steam the cauliflower florets until tender.
- In a large bowl, combine the steamed cauliflower, cherry tomatoes, red onion, and parsley.
- In a separate bowl, whisk together olive oil, lemon juice, salt, and pepper.
- Pour the dressing over the salad and toss to combine.
- Chill for 30 minutes before serving.
Notes
- Serve cold for best flavor.
- Can add feta cheese for extra taste.
- Store leftovers in an airtight container in the fridge.
