- 8 small corn tortillas
- 1/4 cup diced red onion
- 1/4 cup fresh cilantro, chopped

For the Chipotle Sauce, gather the following ingredients:
- 1/2 cup mayonnaise
- 1–2 tablespoons adobo sauce (from canned chipotle peppers)
- 1 teaspoon lime juice
- Salt, to taste
Instructions
- Prepare the cauliflower by washing and cutting it into small florets. Toss with olive oil, smoked paprika, ground cumin, garlic powder, salt, and black pepper.
- Make the chipotle sauce by combining mayonnaise, adobo sauce, lime juice, and salt in a small bowl. Stir until smooth.
- Warm the corn tortillas in a skillet or oven. Fill each tortilla with roasted cauliflower, diced red onion, and chopped cilantro.
- Drizzle the tacos with chipotle sauce and serve with lime wedges.
