Description

Cauliflower tacos topped with a zesty cilantro lime crema.


Ingredients

  • 1 head of cauliflower, cut into florets
  • 2 tablespoons olive oil
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • 8 small tortillas
  • 1 avocado, sliced
  • 1 cup shredded cabbage
  • 1/2 cup cilantro, chopped
  • 1/4 cup sour cream
  • 1 lime, juiced

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a bowl, toss cauliflower with olive oil, cumin, chili powder, salt, and pepper.
  3. Spread cauliflower on a baking sheet and roast for 25-30 minutes until golden.
  4. While the cauliflower cooks, mix sour cream, lime juice, and cilantro in a bowl for the crema.
  5. Warm tortillas in a pan or microwave.
  6. Assemble tacos by placing roasted cauliflower, avocado, and cabbage on tortillas.
  7. Drizzle with cilantro lime crema.
  8. Serve immediately.
