Cauliflower tacos topped with a zesty cilantro lime crema.
Ingredients

- 1 head of cauliflower, cut into florets
- 2 tablespoons olive oil
- 1 teaspoon cumin
- 1 teaspoon chili powder
- Salt and pepper to taste
- 8 small tortillas
- 1 avocado, sliced
- 1 cup shredded cabbage
- 1/2 cup cilantro, chopped
- 1/4 cup sour cream
- 1 lime, juiced
Instructions
- Preheat your oven to 425°F (220°C).
- In a bowl, toss cauliflower with olive oil, cumin, chili powder, salt, and pepper.
- Spread cauliflower on a baking sheet and roast for 25-30 minutes until golden.
- While the cauliflower cooks, mix sour cream, lime juice, and cilantro in a bowl for the crema.
- Warm tortillas in a pan or microwave.
- Assemble tacos by placing roasted cauliflower, avocado, and cabbage on tortillas.
- Drizzle with cilantro lime crema.
- Serve immediately.
