Cheese and olive rolls are delightful baked treats that combine the rich flavors of cheese with the savory taste of olives, made from a soft, yeast-based dough.
Ingredients
- All-purpose flour: 3 cups (360 g)
- Instant yeast: 2 teaspoons (7 g)
- Sugar: 1 tablespoon (12 g)
- Salt: 1 teaspoon (6 g)
- Warm water: 1 cup (240 ml, about 110°F or 43°C)
- Olive oil: 2 tablespoons (30 ml)
- Shredded cheese: 1 cup (100 g)
- Green olives: 1/2 cup (about 75 g, pitted and chopped)
- Dried herbs: 1 teaspoon (optional)
- Egg wash: 1 egg beaten with 1 tablespoon water
Instructions
- In a large mixing bowl, combine warm water, sugar, and instant yeast. Let sit for about 5 minutes until frothy.
- In a separate bowl, whisk together all-purpose flour and salt. Gradually add to the yeast mixture and stir until a dough forms.
- Add olive oil and knead the dough on a floured surface for 5-7 minutes until smooth and elastic.
- In a bowl, mix shredded cheese and chopped green olives for the filling.
- Once the dough has risen and doubled in size, punch it down and divide into 12 pieces. Flatten each piece into a circle.
- Place 1 tablespoon of the cheese and olive mixture in the center of each circle, fold edges over filling, and roll into a ball.
- Place shaped rolls on a baking sheet, cover with a towel, and let rise for another 30 minutes. Preheat oven to 375°F (190°C).
- Brush tops with egg wash and sprinkle with dried herbs if desired. Bake for 20-25 minutes until golden brown.
- Let cool slightly on a wire rack before serving.

- Do not skip the first rise for fluffy rolls.
