Description

A mouth-watering one-pot meal that combines cheeseburger flavors with pasta for a quick and comforting dinner.

Ingredients

Scale
  • 1 tablespoon olive oil
  • 1 large onion, chopped
  • 1 pound ground beef, extra lean
  • 1 tablespoon cornstarch
  • 1 teaspoon oregano, dried
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt (or to taste)
  • 1/2 teaspoon pepper (or to taste)
  • 1 tablespoon chili powder
  • 1/2 ounce macaroni (uncooked) or any small pasta
  • 3 cups chicken broth (low sodium) or beef broth
  • 2 cups milk
  • 1/2 ounce cheddar cheese, shredded
  • 1 tablespoon parsley, fresh, chopped (for garnish)

Instructions

  1. Heat olive oil in a Dutch oven or large skillet over medium-high heat. Add chopped onion and sauté for about 5 minutes until translucent.
  2. Add ground beef and cook for approximately 3 minutes, breaking it into pieces until no longer pink.
  3. Sprinkle cornstarch over the mixture, then add oregano, garlic powder, salt, pepper, and chili powder. Stir to combine. Add pasta, chicken broth, and milk, stirring well.
  4. Bring to a gentle boil, then reduce heat and simmer for 10 to 12 minutes until the pasta is al dente. Stir occasionally to prevent sticking.
  5. Mix in half of the cheddar cheese until melted, and then top with the remaining cheese. Cover and cook on low for 1 minute until melted. Garnish with parsley before serving.

Notes

For a vegetarian version, use lentils or a veggie meat substitute. You can also customize the cheese and pasta types based on preference.
