A mouth-watering one-pot meal that combines cheeseburger flavors with pasta for a quick and comforting dinner.

- 1 tablespoon olive oil
- 1 large onion, chopped
- 1 pound ground beef, extra lean
- 1 tablespoon cornstarch
- 1 teaspoon oregano, dried
- 1 teaspoon garlic powder
- 1/2 teaspoon salt (or to taste)
- 1/2 teaspoon pepper (or to taste)
- 1 tablespoon chili powder
- 1/2 ounce macaroni (uncooked) or any small pasta
- 3 cups chicken broth (low sodium) or beef broth
- 2 cups milk
- 1/2 ounce cheddar cheese, shredded
- 1 tablespoon parsley, fresh, chopped (for garnish)
Instructions
- Heat olive oil in a Dutch oven or large skillet over medium-high heat. Add chopped onion and sauté for about 5 minutes until translucent.
- Add ground beef and cook for approximately 3 minutes, breaking it into pieces until no longer pink.
- Sprinkle cornstarch over the mixture, then add oregano, garlic powder, salt, pepper, and chili powder. Stir to combine. Add pasta, chicken broth, and milk, stirring well.
- Bring to a gentle boil, then reduce heat and simmer for 10 to 12 minutes until the pasta is al dente. Stir occasionally to prevent sticking.
- Mix in half of the cheddar cheese until melted, and then top with the remaining cheese. Cover and cook on low for 1 minute until melted. Garnish with parsley before serving.
Notes
For a vegetarian version, use lentils or a veggie meat substitute. You can also customize the cheese and pasta types based on preference.
