- 1 1/2 lbs sirloin or ribeye steak, cubed
- 4 large Russet or Yukon Gold potatoes, thinly sliced
- 2 cups sharp cheddar cheese, freshly grated
- 1 cup heavy cream
- 1 cup beef broth
- 1 medium onion, finely diced
- 2 cloves garlic, minced
- 2 tbsp butter
- Smoked paprika, to taste
- Black pepper, to taste
- Salt, to taste
- Fresh parsley or green onions (optional, for garnish)
Instructions
- Heat a skillet over medium-high heat and melt butter. Season cubed steak with salt, pepper, and smoked paprika. Sear beef for 4-5 minutes until browned on all sides. Remove and set aside.
- In slow cooker, layer half of the thinly sliced potatoes, half of the diced onion, and half of the minced garlic.
- Add the seared beef on top of the first layer.
- Repeat layering with remaining potatoes, onions, and garlic.
- Pour beef broth and heavy cream evenly over the layered ingredients. Season with additional salt and pepper if desired.
- Top with grated sharp cheddar cheese.
- Cover and cook on low for 6-8 hours or high for 3-4 hours until potatoes are tender and casserole is bubbling.
- Garnish with fresh parsley or green onions before serving.
