- 2 (10-ounce) packages frozen chopped broccoli
- 2 cooked boneless chicken breast halves, chopped
- 1 (10.5-ounce) can condensed cream of chicken soup
- 1 (10.5-ounce) can condensed cream of mushroom soup
- 1/2 cup mayonnaise
- 1 teaspoon lemon juice
- 1 1/2 cups shredded Cheddar cheese
Instructions
- Preheat the oven to 350°F (175°C).
- Spread frozen chopped broccoli evenly across the bottom of a 9×13 inch baking dish.
- Top with the chopped cooked chicken breast halves.
- In a medium bowl, combine the condensed soups, mayonnaise, and lemon juice. Stir until smooth, then pour over the chicken and broccoli layer.
- Sprinkle shredded Cheddar cheese generously over the top.
- Bake for 35-40 minutes, until bubbly and cheese is lightly browned.
- Allow the casserole to cool for a few minutes before serving.
Notes
- For a lighter version, use low-fat mayonnaise and cheese.
- Substitute fresh broccoli if you prefer, just steam it first.
- You can use turkey or rotisserie chicken instead of cooked chicken breasts.
- To freeze, wrap tightly in foil before baking and store for up to 3 months. Thaw before baking.
