Ingredients

  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup sour cream
  • 2 cups fresh or frozen pitted cherries

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Grease a 9×13 inch baking pan with butter or cooking spray and dust with flour.
  3. In a medium bowl, whisk together flour, baking powder, and salt.
  4. Cream the softened butter and granulated sugar in a large mixing bowl until light and fluffy.
  5. Add eggs one at a time, beating well after each, then mix in the vanilla extract.
  6. Gradually add the dry ingredients to the butter mixture, alternating with sour cream, starting and ending with dry ingredients.
  7. Fold in the pitted cherries gently.
  8. Pour batter into the prepared baking pan and smooth the top. Bake for 30-35 minutes until a toothpick comes out clean.
  9. Let the cake cool completely in the pan before serving.

Notes

For best results, use fresh cherries in season. You can also substitute ingredients as needed.
