- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup sour cream
- 2 cups fresh or frozen pitted cherries
Instructions
- Preheat the oven to 350°F (175°C).
- Grease a 9×13 inch baking pan with butter or cooking spray and dust with flour.
- In a medium bowl, whisk together flour, baking powder, and salt.
- Cream the softened butter and granulated sugar in a large mixing bowl until light and fluffy.
- Add eggs one at a time, beating well after each, then mix in the vanilla extract.
- Gradually add the dry ingredients to the butter mixture, alternating with sour cream, starting and ending with dry ingredients.
- Fold in the pitted cherries gently.
- Pour batter into the prepared baking pan and smooth the top. Bake for 30-35 minutes until a toothpick comes out clean.
- Let the cake cool completely in the pan before serving.
Notes
For best results, use fresh cherries in season. You can also substitute ingredients as needed.
