Description

A delicious and nutritious dish that combines tender chicken, vibrant broccoli, and creamy cheese, perfect for busy weeknights.

Ingredients

Scale
  • 1 lb chicken breasts, cut into bite-sized pieces
  • 2 tbsp olive oil
  • 4 cloves minced garlic
  • 2 cups broccoli florets
  • 1/2 cup cherry tomatoes, chopped in half
  • 1 cup spinach
  • 1/2 cup mozzarella cheese, shredded
  • 4 oz cream cheese
  • 1 tsp Italian seasoning
  • 1 tsp black pepper
  • 1/4 tsp salt (or more to taste)

Instructions

  1. Prepare the chicken by cutting into bite-sized pieces for even cooking.
  2. Heat olive oil in a large skillet over medium heat and cook chicken for about 5 minutes until no longer pink.
  3. Season the chicken with Italian seasoning, salt, and black pepper. Add minced garlic and cook for another minute.
  4. Add cherry tomatoes and broccoli florets, cooking for about 5 minutes until broccoli is tender.
  5. Add spinach, mozzarella, and cream cheese, stirring for 2 minutes until the cheese melts into a creamy sauce.
  6. Garnish with parsley and serve immediately.

Notes

For a different flavor profile, try swapping out the chicken for shrimp or tofu and using additional vegetables like bell peppers or snap peas.
