- 2 pounds chicken thighs or breasts, cut into bite-sized pieces
- 2 tablespoons vegetable oil or ghee
- 1 large onion, finely chopped
- 4 cloves garlic, minced
- 1-inch piece ginger, minced
- 2 tomatoes, chopped (or 1 cup canned tomatoes)
- 2 teaspoons ground cumin
- 2 teaspoons ground coriander
- 1 teaspoon turmeric powder
- 1 teaspoon garam masala
- 1 teaspoon chili powder (adjust to taste)
- Salt, to taste
- 1 cup coconut milk (or yogurt)
- Fresh cilantro, for garnish (optional)
Instructions
- Clean and dry the chicken, season with salt, and let it sit for 15 minutes.
- Heat vegetable oil or ghee in a pot over medium heat. Add chopped onions and sauté for 5-7 minutes until translucent and lightly browned.
- Add minced garlic and ginger. Stir for a minute until fragrant.
- Lower the heat and add cumin, coriander, turmeric, garam masala, and chili powder. Stir for 2 minutes to release the spices’ essential oils.
- Add the seasoned chicken to the pot and cook for 5-6 minutes until browned on all sides.
- Add chopped tomatoes or canned tomatoes and simmer for 5 minutes to break down the tomatoes.
- Pour in the coconut milk (or yogurt) and bring to a gentle simmer. Cover and cook for 20-25 minutes until the chicken is tender and cooked through.
- Taste the curry and adjust the seasoning with salt or chili powder if needed. Garnish with fresh cilantro before serving.
Notes
- For a richer flavor, marinate the chicken in yogurt and spices for a few hours or overnight.
- If you prefer a spicier curry, add more chili powder or fresh chopped chilies.
- For a creamier sauce, use heavy cream instead of coconut milk.
- Ensure to sauté the spices properly to bring out their full flavor before adding the chicken.
