Description

Chicken curry is a flavorful dish made with tender chicken, aromatic spices, and a creamy sauce. It’s perfect for family dinners or gatherings.

  • 2 pounds chicken thighs or breasts, cut into bite-sized pieces
  • 2 tablespoons vegetable oil or ghee
  • 1 large onion, finely chopped
  • 4 cloves garlic, minced
  • 1-inch piece ginger, minced
  • 2 tomatoes, chopped (or 1 cup canned tomatoes)
  • 2 teaspoons ground cumin
  • 2 teaspoons ground coriander
  • 1 teaspoon turmeric powder
  • 1 teaspoon garam masala
  • 1 teaspoon chili powder (adjust to taste)
  • Salt, to taste
  • 1 cup coconut milk (or yogurt)
  • Fresh cilantro, for garnish (optional)

Instructions

  1. Clean and dry the chicken, season with salt, and let it sit for 15 minutes.
  2. Heat vegetable oil or ghee in a pot over medium heat. Add chopped onions and sauté for 5-7 minutes until translucent and lightly browned.
  3. Add minced garlic and ginger. Stir for a minute until fragrant.
  4. Lower the heat and add cumin, coriander, turmeric, garam masala, and chili powder. Stir for 2 minutes to release the spices’ essential oils.
  5. Add the seasoned chicken to the pot and cook for 5-6 minutes until browned on all sides.
  6. Add chopped tomatoes or canned tomatoes and simmer for 5 minutes to break down the tomatoes.
  7. Pour in the coconut milk (or yogurt) and bring to a gentle simmer. Cover and cook for 20-25 minutes until the chicken is tender and cooked through.
  8. Taste the curry and adjust the seasoning with salt or chili powder if needed. Garnish with fresh cilantro before serving.

Notes

  • For a richer flavor, marinate the chicken in yogurt and spices for a few hours or overnight.
  • If you prefer a spicier curry, add more chili powder or fresh chopped chilies.
  • For a creamier sauce, use heavy cream instead of coconut milk.
  • Ensure to sauté the spices properly to bring out their full flavor before adding the chicken.
