Description

Chicken fajitas are a flavorful Tex-Mex dish made with marinated chicken, bell peppers, onions, and served in warm tortillas, perfect for any occasion.

  • 2 tablespoons olive oil
  • 1 teaspoon chili powder

  • Salt and pepper to taste
  • 1 bell pepper (sliced; red, green, or yellow)
  • 1 medium onion (sliced)
  • 8 flour or corn tortillas

Instructions

  1. Marinate the chicken by mixing olive oil, chili powder, cumin, paprika, garlic powder, onion powder, salt, and pepper in a bowl. Add the chicken strips and coat evenly. Let marinate for at least 30 minutes, up to 2 hours in the refrigerator.
  2. Prepare the vegetables by slicing the bell pepper and onion into thin strips.
  3. Heat a large skillet or frying pan over medium-high heat. Add the marinated chicken and cook for 5-7 minutes, stirring frequently, until no longer pink in the center. Remove the chicken from the skillet and set aside.
  4. Add more olive oil if necessary and sauté the sliced bell peppers and onions in the same skillet for about 4-5 minutes until tender and slightly charred.
  5. Return the cooked chicken to the skillet, stir everything together, and warm for an additional minute or two.
  6. Warm the tortillas by wrapping them in foil and placing them in a preheated oven at 350°F (175°C) for about 10-15 minutes, or heat them in a skillet for 30 seconds on each side.
  7. Serve the sizzling chicken and vegetable mixture on a serving platter or hot skillet with the tortillas on the side. Offer optional toppings like sour cream, guacamole, salsa, or lime wedges for extra flavor.
