- 2 tablespoons olive oil
- 1 teaspoon chili powder

- Salt and pepper to taste
- 1 bell pepper (sliced; red, green, or yellow)
- 1 medium onion (sliced)
- 8 flour or corn tortillas
- Optional: lime wedges, cilantro, sour cream, guacamole, salsa, or shredded cheese for serving.
Instructions
- Marinate the chicken by mixing olive oil, chili powder, cumin, paprika, garlic powder, onion powder, salt, and pepper in a bowl. Add the chicken strips and coat evenly. Let marinate for at least 30 minutes, up to 2 hours in the refrigerator.
- Prepare the vegetables by slicing the bell pepper and onion into thin strips.
- Heat a large skillet or frying pan over medium-high heat. Add the marinated chicken and cook for 5-7 minutes, stirring frequently, until no longer pink in the center. Remove the chicken from the skillet and set aside.
- Add more olive oil if necessary and sauté the sliced bell peppers and onions in the same skillet for about 4-5 minutes until tender and slightly charred.
- Return the cooked chicken to the skillet, stir everything together, and warm for an additional minute or two.
- Warm the tortillas by wrapping them in foil and placing them in a preheated oven at 350°F (175°C) for about 10-15 minutes, or heat them in a skillet for 30 seconds on each side.
- Serve the sizzling chicken and vegetable mixture on a serving platter or hot skillet with the tortillas on the side. Offer optional toppings like sour cream, guacamole, salsa, or lime wedges for extra flavor.
