Chicken Fettuccine Alfredo is a rich and creamy dish with tender chicken, fettuccine noodles, and a velvety Alfredo sauce. Perfect for family dinners and special occasions.

- 12 ounces of fettuccine pasta
- 2 boneless, skinless chicken breasts (about 1 pound or 450 grams)
- 4 tablespoons of butter (½ stick)
- 1 cup of heavy cream (240 milliliters)
- 1 cup of grated Parmesan cheese
- 2 cloves of garlic (minced)
- Salt to taste
- Black pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- Cook the fettuccine pasta in a large pot of salted boiling water according to the package instructions until al dente. Reserve 1 cup of pasta water, then drain.
- Season the chicken breasts with salt and black pepper. In a skillet, melt 2 tablespoons of butter over medium heat. Cook the chicken for 6-7 minutes on each side until golden brown and fully cooked, reaching an internal temperature of 165°F (74°C). Slice the chicken and set aside.
- In the same skillet, melt the remaining 2 tablespoons of butter. Add the minced garlic and sauté for about 1 minute. Pour in the heavy cream, bring to a simmer, and stir gently. Add Parmesan cheese and whisk until the sauce becomes creamy. Season with salt and pepper to taste. Add reserved pasta water to adjust the consistency if needed.
- Add the cooked fettuccine pasta to the sauce and toss to coat evenly. Add the sliced chicken on top and mix. Heat everything through for a couple of minutes and serve hot, garnished with parsley if desired.
Notes
- Be sure to use freshly grated Parmesan cheese for the best flavor and smooth texture.
- If the sauce gets too thick, add a bit of pasta water to adjust the consistency.
- To add extra flavor, you can stir in freshly cracked black pepper or a pinch of nutmeg.
- For a lighter version, try using low-fat cream or a plant-based cream substitute.
