Description

Chicken Fettuccine Alfredo is a rich and creamy dish with tender chicken, fettuccine noodles, and a velvety Alfredo sauce. Perfect for family dinners and special occasions.


Ingredients

  • 12 ounces of fettuccine pasta
  • 2 boneless, skinless chicken breasts (about 1 pound or 450 grams)
  • 4 tablespoons of butter (½ stick)
  • 1 cup of heavy cream (240 milliliters)
  • 1 cup of grated Parmesan cheese
  • 2 cloves of garlic (minced)
  • Salt to taste
  • Black pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Cook the fettuccine pasta in a large pot of salted boiling water according to the package instructions until al dente. Reserve 1 cup of pasta water, then drain.
  2. Season the chicken breasts with salt and black pepper. In a skillet, melt 2 tablespoons of butter over medium heat. Cook the chicken for 6-7 minutes on each side until golden brown and fully cooked, reaching an internal temperature of 165°F (74°C). Slice the chicken and set aside.
  3. In the same skillet, melt the remaining 2 tablespoons of butter. Add the minced garlic and sauté for about 1 minute. Pour in the heavy cream, bring to a simmer, and stir gently. Add Parmesan cheese and whisk until the sauce becomes creamy. Season with salt and pepper to taste. Add reserved pasta water to adjust the consistency if needed.
  4. Add the cooked fettuccine pasta to the sauce and toss to coat evenly. Add the sliced chicken on top and mix. Heat everything through for a couple of minutes and serve hot, garnished with parsley if desired.

Notes

  • Be sure to use freshly grated Parmesan cheese for the best flavor and smooth texture.
  • If the sauce gets too thick, add a bit of pasta water to adjust the consistency.
  • To add extra flavor, you can stir in freshly cracked black pepper or a pinch of nutmeg.
  • For a lighter version, try using low-fat cream or a plant-based cream substitute.
