- 1 pound boneless, skinless chicken breast, diced into small pieces

- 2 tablespoons vegetable oil (or canola oil)
- 2 cloves garlic, minced
- 1 onion, chopped
- 2 green onions, sliced (for garnish)
- Salt and pepper, to taste
- Optional: 2 eggs, beaten (for added protein and richness)
Instructions
- Prepare ingredients: Chop chicken, mince garlic, chop onions, slice green onions, and beat eggs (if using).
- In a large skillet or wok, heat 1 tablespoon of oil over medium-high heat. Add chicken, cooking until golden brown, about 5-7 minutes. Remove from the pan and set aside.
- Add another tablespoon of oil to the pan. Sauté onion and garlic for about 2 minutes until fragrant. Add mixed vegetables and stir-fry for 3-4 minutes, maintaining their crispness.
- Push vegetables to one side of the pan. Pour beaten eggs on the other side, scramble until fully cooked, then mix with the vegetables.
- Add cooked chicken back into the pan along with the cold rice, soy sauce, salt, and pepper. Stir well, ensuring the rice is evenly coated and heated through, about 3-5 minutes.
- Garnish with sliced green onions and serve hot.
