Description

  • 1 pound boneless, skinless chicken breast, diced into small pieces
  • 1 cup mixed vegetables (like peas and carrots)
  • 3 tablespoons soy sauce (adjust to taste)
  • 2 tablespoons vegetable oil (or canola oil)
  • 2 cloves garlic, minced
  • 1 onion, chopped
  • 2 green onions, sliced (for garnish)
  • Salt and pepper, to taste
  • Optional: 2 eggs, beaten (for added protein and richness)

Instructions

  1. Prepare ingredients: Chop chicken, mince garlic, chop onions, slice green onions, and beat eggs (if using).
  2. In a large skillet or wok, heat 1 tablespoon of oil over medium-high heat. Add chicken, cooking until golden brown, about 5-7 minutes. Remove from the pan and set aside.
  3. Add another tablespoon of oil to the pan. Sauté onion and garlic for about 2 minutes until fragrant. Add mixed vegetables and stir-fry for 3-4 minutes, maintaining their crispness.
  4. Push vegetables to one side of the pan. Pour beaten eggs on the other side, scramble until fully cooked, then mix with the vegetables.
  5. Add cooked chicken back into the pan along with the cold rice, soy sauce, salt, and pepper. Stir well, ensuring the rice is evenly coated and heated through, about 3-5 minutes.
  6. Garnish with sliced green onions and serve hot.
