- 2 tablespoons unsalted butter
- 1 pound chicken breasts, skinless and boneless, cut into bite-size pieces
- 1 teaspoon garlic powder
- 1 tablespoon dried parsley
- 3 cloves garlic, minced
- 1 medium onion, chopped
- Salt and pepper to taste
- 12 ounces penne pasta, uncooked
- 2 1/2 cups chicken broth
- 2 cups milk
- 1/4 cup fresh parsley, chopped
- 1 cup Parmesan cheese, freshly grated
- 1 tablespoon butter (for topping)
- 1/2 cup breadcrumbs (preferably Panko)
- 1 teaspoon garlic powder (for topping)
- 1 tablespoon dried parsley (for topping)
Instructions
- Heat a Dutch oven or large skillet over medium heat and add olive oil and unsalted butter. Season chicken with garlic powder and dried parsley, then add to the pan and cook until browned, about 5-7 minutes.
- Add chopped onion and minced garlic, and sauté for 2-3 minutes until onion is translucent; season with salt and pepper.
- Incorporate uncooked penne pasta, chicken broth, and milk. Stir well, bring to a boil, then reduce to simmer for about 15 minutes, stirring occasionally.
- Remove from heat and mix in grated Parmesan cheese and chopped parsley until melted and combined.
- In a separate skillet, melt 1 tablespoon of butter and sauté breadcrumbs, garlic powder, and dried parsley until golden and crispy.
- Serve Chicken Kiev Pasta topped with breadcrumb mixture and additional parsley or Parmesan if desired.
Notes
Consider adding vegetables like spinach or peas for extra nutrition. For a vegetarian version, substitute chicken with sautéed mushrooms.
