Description
A hearty and creamy chicken lasagna made with rotisserie chicken, fresh spinach, and layers of mozzarella cheese. Perfect for family dinners.

- 9 lasagna noodles, cooked al dente
- 4 cups shredded rotisserie chicken (or cooked from 2 lbs chicken breast)
- 1 tablespoon olive oil
- 1 medium onion, finely chopped
- 4 tablespoons unsalted butter
- 1/3 cup all-purpose flour
- 2 1/2 cups chicken broth
- 1 1/2 cups half and half (or equal parts heavy cream and milk)
- 5 oz fresh spinach, coarsely chopped
- 2 teaspoons sea salt
- 1/2 teaspoon black pepper
- 3 garlic cloves, minced
- 15 oz ricotta cheese
- 1 large egg
- 1/4 cup parsley, chopped
- 1/4 cup parmesan cheese, grated
- 3 cups mozzarella cheese (about 12 oz, divided)
Instructions
- Preheat oven to 375°F (190°C). Cook lasagna noodles al dente in salted water, then drain and cool. Shred rotisserie chicken.
- Heat olive oil in a saucepan over medium heat. Sauté chopped onion for 5 minutes until translucent. Add butter and whisk in flour to make a roux, then gradually add chicken broth and half and half, seasoning with salt and pepper. Cook until thickened, 5-7 minutes.
- Remove sauce from heat and stir in garlic and chopped spinach. Set aside.
- In a large bowl, combine ricotta, egg, parsley, parmesan, and 1 cup of mozzarella. Mix until smooth.
- Start assembling by spreading a small amount of spinach cream sauce in the bottom of a 9×13 casserole dish. Layer 3 noodles, half the ricotta mixture, half the chicken, and half the spinach sauce. Repeat with remaining ingredients, finishing with spinach sauce and top mozzarella.
- Cover with foil and bake for 45 minutes. Remove foil and broil for 2-3 minutes until cheese is golden and bubbly. Let rest for 10 minutes before slicing.
Notes
- Use leftover or store-bought rotisserie chicken to save time.
- To make this dish lighter, replace half and half with a low-fat milk alternative.
- Rest the lasagna for 10 minutes before serving to allow layers to set.
- For a variation, try adding vegetables like zucchini or mushrooms for added nutrition.
