Description

Chicken Lasagna Roll-Ups are a creative and comforting twist on traditional lasagna, featuring tender chicken, creamy ricotta, and melted mozzarella rolled up in lasagna noodles and baked to perfection in marinara sauce.


Ingredients

  • 12 lasagna noodles
  • 2 cups cooked chicken, shredded
  • 2 cups ricotta cheese
  • 1 1/2 cups shredded mozzarella cheese
  • 1 cup grated Parmesan cheese
  • 2 cups spinach (optional)
  • 3 cloves garlic, minced
  • 1 egg
  • 1 1/2 cups marinara sauce
  • 2 tablespoons butter
  • Salt and pepper to taste
  • Fresh parsley, chopped for garnish

Instructions

  1. Bring a large pot of salted water to a boil. Cook the lasagna noodles according to package directions (8–10 minutes) until al dente. Drain and lay flat on a clean towel or parchment paper.
  2. In a large mixing bowl, combine shredded chicken, ricotta cheese, 1 cup mozzarella cheese, Parmesan cheese, garlic, spinach (if using), and egg. Season with salt and pepper. Mix thoroughly.
  3. Preheat oven to 375°F (190°C). Spread 1/2 cup marinara sauce on the bottom of a baking dish.
  4. Place a portion of the chicken mixture at one end of a noodle and roll it up. Place seam side down in the prepared baking dish. Repeat with remaining noodles and filling.
  5. Pour the remaining marinara sauce over the roll-ups. Sprinkle with remaining mozzarella and dot with butter.
  6. Cover with foil and bake for 25 minutes. Remove foil and bake another 10 minutes until cheese is golden and bubbly.
  7. Let cool for a few minutes. Garnish with fresh parsley before serving.

Notes

  • Use part-skim cheeses for a lighter version.
  • Don’t overcook the noodles; they will continue cooking in the oven.
  • Ensure even distribution of marinara sauce to keep roll-ups moist.
  • Can be assembled ahead and baked later.
  • Freeze leftovers for up to 2 months.
