Description

Chicken Lo Mein is a stir-fried noodle dish with tender chicken, fresh vegetables, and a flavorful sauce. Perfect for a quick, customizable meal.


Ingredients

  • 1/3 cup chicken broth
  • 4 tablespoons soy sauce
  • 2 tablespoons brown sugar
  • 2 teaspoons sesame oil
  • 8 oz noodles (cooked according to package instructions)
  • 1 tablespoon oil (olive, avocado, or sesame oil)
  • 1 lb chicken (sliced into strips)
  • 2 large carrots (sliced)
  • 1 large onion (sliced)
  • 2 cups broccoli (cut into florets)
  • 4 garlic cloves (minced)

Instructions

  1. Prepare the sauce by whisking together chicken broth, brown sugar, soy sauce, and sesame oil in a small bowl. Set aside.
  2. Slice the carrots, onion, and broccoli into 2-inch pieces. Slice the chicken into strips.
  3. Heat a tablespoon of oil in a wok over medium-high heat. Add the chicken and sauté for 5-7 minutes until golden brown and cooked through. Remove and set aside.
  4. Add more oil to the wok if needed, and sauté the onions in the chicken drippings for 3-4 minutes. Add the carrots and cook for another 3-4 minutes until soft. Stir in the broccoli and cook for 3 minutes more. Add the minced garlic and cook for 1 more minute until fragrant.
  5. Return the chicken and onions to the wok. Pour the sauce over the mixture and let it simmer for 2 minutes.
  6. Add the cooked noodles to the wok, tossing everything together until the noodles are coated in the sauce. Remove from heat.

Notes

  • For a richer flavor, marinate the chicken in soy sauce and sesame oil for 30 minutes before cooking.
  • Ensure your wok is hot enough to sear the chicken and vegetables, which adds flavor through caramelization.
  • If you’re using gluten-free noodles, ensure the soy sauce is also gluten-free (tamari works well).
  • Don’t overcook the chicken or vegetables to maintain a tender texture.
