Ingredients
Scale
- 250g tortilla or plain corn chips
- 700g chicken thighs or breast, skinless and boneless
- 15 tbsp olive oil
- 2 tbsp tomato paste
- 2 tsp sugar
- 1 cup chicken broth (separated liquid stock)
- 3 tbsp lime juice
- 2 garlic cloves, minced
- 2 tsp garlic powder
- 2 tsp onion powder
- 2 tsp dried oregano
- 3 tsp cumin powder
- 3 tsp paprika
- 1/2 tsp cayenne pepper (optional)
- 1/2 tsp salt
- 1/2 tsp pepper
- 2 medium avocados
- 3 tbsp coriander (cilantro), roughly chopped
- 2 tbsp lime juice (for guacamole)
- 250g shredded cheddar or Monterey Jack cheese
- Sour cream (for serving)
- Fresh coriander (cilantro) leaves (for garnish)
- Jalapeño (sliced or chopped, for garnish)
Instructions
- Prepare the chicken and seasoning by mixing garlic powder, onion powder, oregano, cumin powder, paprika, cayenne pepper, salt, and pepper with chicken broth to form a paste. Coat the chicken in the seasoning paste.
- Heat 15 tablespoons of olive oil in a skillet over medium-high heat. Add the seasoned chicken and cook for 3 minutes on each side until golden brown. Set the chicken aside.
- Return the skillet to the stove, add remaining chicken broth, tomato paste, and sugar. Scrape in the seasoning paste from the chicken, mix well, and bring to a simmer.
- Shred the cooked chicken and return it to the skillet. Toss in the sauce and simmer for 3 minutes until the sauce thickens. Adjust salt as needed.
- Prepare guacamole by mashing avocados with cilantro and lime juice. Season with salt and pepper to taste.
- Preheat the oven to 180°C (350°F). Layer tortilla chips on a baking tray, top with half of the chicken mixture and shredded cheese. Repeat the layers with remaining chips, chicken, and cheese.
- Bake the nachos for about 7 minutes or until the cheese is melted and bubbly.
- Garnish with fresh coriander and sliced jalapeño. Serve immediately with guacamole and sour cream on the side.
Notes
- For a spicier version, add more cayenne pepper or a dash of hot sauce to the chicken mixture.
- If you don’t have time to make guacamole, store-bought works fine.
- Ensure the nachos are layered properly to prevent sogginess from the chicken mixture.
