Description

A delicious and customizable Chicken Nachos recipe with seasoned chicken, melted cheese, fresh guacamole, and crispy tortilla chips.


Ingredients

  • 250g tortilla or plain corn chips
  • 700g chicken thighs or breast, skinless and boneless
  • 15 tbsp olive oil
  • 2 tbsp tomato paste
  • 2 tsp sugar
  • 1 cup chicken broth (separated liquid stock)
  • 3 tbsp lime juice
  • 2 garlic cloves, minced
  • 2 tsp garlic powder
  • 2 tsp onion powder
  • 2 tsp dried oregano
  • 3 tsp cumin powder
  • 3 tsp paprika
  • 1/2 tsp cayenne pepper (optional)
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 2 medium avocados
  • 3 tbsp coriander (cilantro), roughly chopped
  • 2 tbsp lime juice (for guacamole)
  • 250g shredded cheddar or Monterey Jack cheese
  • Sour cream (for serving)
  • Fresh coriander (cilantro) leaves (for garnish)
  • Jalapeño (sliced or chopped, for garnish)

Instructions

  1. Prepare the chicken and seasoning by mixing garlic powder, onion powder, oregano, cumin powder, paprika, cayenne pepper, salt, and pepper with chicken broth to form a paste. Coat the chicken in the seasoning paste.
  2. Heat 15 tablespoons of olive oil in a skillet over medium-high heat. Add the seasoned chicken and cook for 3 minutes on each side until golden brown. Set the chicken aside.
  3. Return the skillet to the stove, add remaining chicken broth, tomato paste, and sugar. Scrape in the seasoning paste from the chicken, mix well, and bring to a simmer.
  4. Shred the cooked chicken and return it to the skillet. Toss in the sauce and simmer for 3 minutes until the sauce thickens. Adjust salt as needed.
  5. Prepare guacamole by mashing avocados with cilantro and lime juice. Season with salt and pepper to taste.
  6. Preheat the oven to 180°C (350°F). Layer tortilla chips on a baking tray, top with half of the chicken mixture and shredded cheese. Repeat the layers with remaining chips, chicken, and cheese.
  7. Bake the nachos for about 7 minutes or until the cheese is melted and bubbly.
  8. Garnish with fresh coriander and sliced jalapeño. Serve immediately with guacamole and sour cream on the side.

Notes

  • For a spicier version, add more cayenne pepper or a dash of hot sauce to the chicken mixture.
  • If you don’t have time to make guacamole, store-bought works fine.
  • Ensure the nachos are layered properly to prevent sogginess from the chicken mixture.
