Description

Chicken Noodle Soup is a comforting dish that blends tender chicken, vegetables, and spices in a soothing broth. Perfect for family meals and moments of warmth.


Ingredients

  • 1/2 Tablespoon butter
  • 2 ribs celery, diced
  • 34 large carrots, diced
  • 1 clove garlic, minced
  • 10 cups chicken stock or broth
  • 1 teaspoon salt to taste
  • 1/2 teaspoon freshly ground black pepper to taste
  • 1/8 teaspoon dried rosemary (or more to taste)
  • 1/8 teaspoon dried thyme
  • 1/8 teaspoon crushed red pepper flakes
  • 1 batch homemade egg noodles (or 4 cups dry egg noodles)
  • 3 cups rotisserie chicken, shredded
  • 1 teaspoon Better than Bouillon chicken flavor (or more as needed)
  • Optional: Chicken bouillon granules

Instructions

  1. In a large stock pot, melt butter over medium-high heat. Add diced celery and carrots, sauté for 3 minutes, stirring occasionally.
  2. Add minced garlic and cook for an additional 30 seconds until fragrant.
  3. Pour in the chicken stock or broth and season with rosemary, thyme, crushed red pepper flakes, and salt. Taste and adjust seasonings as needed.
  4. Bring the broth to a boil over high heat. Add noodles and cook until al dente, about 6-8 minutes, depending on the type of noodle.
  5. Once noodles are cooked, remove the pot from heat and fold in shredded rotisserie chicken. Taste again and adjust seasonings or add more broth if needed.
  6. Serve hot and enjoy! If storing, allow soup to cool before transferring to an airtight container.

Notes

  • For a healthier version, replace butter with olive oil or margarine.
  • Vegetable broth can be used as a substitute for chicken stock for a vegetarian option.
  • If you don’t have egg noodles, any type of pasta can be used instead.
  • If you prefer a stronger chicken flavor, add more Better than Bouillon or chicken bouillon granules.
  • For a lower-sodium option, choose low-sodium chicken stock and use less salt.
