- 4 boneless, skinless chicken breasts
- 1 cup all-purpose flour
- 2 large eggs
- 1 cup breadcrumbs (preferably Italian-style)
- ½ cup grated Parmesan cheese
- 2 cups marinara sauce (store-bought or homemade)
- 2 cups shredded mozzarella cheese
- Salt and pepper to taste
- 1 teaspoon dried oregano (optional)
- Fresh basil leaves for garnish (optional)
- Olive oil for frying
Instructions
- Preheat oven to 375°F (190°C). Place chicken breasts between plastic wrap and pound to an even thickness, about ½ inch. Season with salt, pepper, and oregano.
- Set up a dredging station: flour in one bowl, beaten eggs in the second, and breadcrumbs mixed with Parmesan cheese in the third. Coat each chicken breast first in flour, then eggs, and finally the breadcrumb mixture. Press breadcrumbs into chicken to ensure they stick.
- Heat olive oil in a large skillet over medium heat. Fry the breaded chicken breasts for about 3-4 minutes on each side until golden brown. Transfer to paper towels to absorb excess oil.
- Spread a thin layer of marinara sauce in a large baking dish. Place the fried chicken on top, cover with more marinara sauce, and top with shredded mozzarella cheese.
- Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly and the chicken is heated through.
Notes
- If the breading isn’t crispy, the oil might not have been hot enough while frying.
- For extra crunch, consider double-breading the chicken.
- If you don’t have marinara sauce, you can substitute with pesto or tomato basil sauce.
- For a gluten-free version, use almond flour for the breading.
