- ½ cup of red onion, finely chopped
- ¼ cup of black olives, sliced
- ¼ cup of feta cheese, crumbled (optional)
- 1 cup of plain Greek yogurt
- 2 tablespoons of olive oil
- 1 tablespoon of lemon juice
- 1 teaspoon of garlic powder
- Salt and pepper to taste
Instructions
- Cook pasta according to package instructions, then drain and rinse with cold water to cool down.
- Chop the vegetables (tomatoes, cucumber, bell pepper, red onion, and olives) and prepare feta cheese if using.
- In a bowl, whisk together Greek yogurt, olive oil, lemon juice, garlic powder, salt, and pepper until smooth.
- Combine pasta, chicken, vegetables, and Greek yogurt dressing in a large bowl. Toss gently to coat all ingredients.
- If using, sprinkle crumbled feta cheese on top and serve. Chill for 30 minutes for best flavor.
