- 4 whole pita breads
- 1 pound boneless skinless chicken breasts, diced
- 3 tablespoons olive oil, divided
- 4 cloves garlic, minced
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- Salt and pepper to taste
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1 cup cherry tomatoes, halved
- 1/2 cup red onion, thinly sliced
- 1/2 cup black olives, sliced
- 1/4 cup fresh basil leaves, chopped (optional)
- Balsamic glaze (optional for drizzling)
Instructions
- Preheat your oven to 400°F (200°C) and arrange pita bread on a baking sheet.
- Heat 2 tablespoons of olive oil in a skillet over medium heat, then cook the diced chicken for 5-7 minutes until browned. Add garlic and herbs; cook for another 1-2 minutes.
- Brush pita bread with remaining olive oil and divide the chicken mixture among the pitas.
- Top with mozzarella, Parmesan, tomatoes, onions, and olives. Bake for 10-12 minutes or until cheese is melted and edges are crispy. Garnish with basil and balsamic glaze if desired.
Notes
For the best flavor, marinate chicken in olive oil and herbs before cooking. Use fresh cheese for better melting.
